Time: 20 minutes  

Serving: 1 potato per person. 

Ingredients: 

1 large red skinned potato, washed

black pepper

a splash of olive oil

1 small pickled gherkin sliced lengthways

1 teasp sauerkraut

1 teasp sour cream

1 teasp chopped chives

Method:

Place whole potato on a plate in a microwave. Cover and cook on high for 2 mins.

Cut a slit along the length  of the potato taking care not to cut all the way through.

Cut corned beef slice into smaller pieces as needed. Arrange corned beef in the potato and warm for 30 second in microwave to heat the beef. Add gherkin, and sauerkraut on top of the beef in the potato. Top with sour cream and chives. Sprinkle with black pepper and serve while hot.
